Penney seals two more Latics deals
Much-travelled forward Byfield, 32, and former Sheffield Wednesday defender Gilbert, 26, have both been on trial at Boundary Park.
Latics assistant manager Martin Gray said of Byfield: "We're delighted to have Darren on board to provide competition for places for the other forwards."
Both players could make their debuts against Stockport in Saturday's League One opener at Boundary Park.
