Jackson had started the game on the bench, with all the pre-match talk being about the return of Chris Dickson to the club where he scored 11 goals in 14 games two seasons ago.
Stimson said: "The little man (Jackson) did what he does best coming off the bench and that's a good sign. That's the way to react, if you get left out and then get a chance you must go on and make an impact.
"He's picked the ball up, turned and there's just one thing on his mind and it was nice to see it go in as it has been a while since we've scored at home.
"There's been a lot of talk about Chris Dickson having come back to the club and he has given the place a lift as he's a boy who plays with a smile on his face and wants to do well. However, deep down I know Jacko doesn't want to give up his number one spot among the strikers."
